The social innovation festival "SOCIAL INNOVATION WEEK 2023 (SIW)" will be held from November 6th (Monday) to November 12th (Sunday).

Our partner company Euglena, which promotes its business with the Euglena Philosophy of "Sustainability First," offers various food ingredients that have the potential to grow and cultivate in special and closed environments such as space. We have developed 2040 Sustainable Ramen, an instant cup noodle that utilizes By realizing the local production and local consumption of food in space (Space Food 3.0), this initiative is the first step toward providing sustainable and nutritionally balanced meals even during long stays in space. .

In the post-SDGs after 2030, which is the target year for achieving the SDGs, problem solving and technology evolution will expand from the global scale to the cosmic scale, and in the science and technology field in particular, long-term stays in space will become a reality in 2040. It is thought that. In space, we not only focused on providing nutrition, but also pursued the appeal of food in terms of deliciousness and local production for local consumption in space.
A limited number of 500 pieces of this "2040 Sustainable Ramen" will be sold at the main venue, Hikarie Hall, from November 9th.

We have also decided to sell vegan donuts “VENUTS” where everyone can share “deliciousness” together. 100% VEGAN non-fried donuts made with only plant-based ingredients, without using any animal ingredients such as dairy products.
Colorful, fun, moist, sweet, and delicious donuts are a new type of sweets that everyone, whether vegan or non-vegan, can share the deliciousness with. Cold brew coffee will also be available for sale at the venue.

About the ingredients and characteristics of sustainable ramen in 2040

■ Soup (ingredients: microalgae aurantiochytrium)
Features: A recipe that does not use animal ingredients and is low in sodium so that you can drink up the nutritious soup.
・A type of very small algae with a diameter of about 5-20 μm, and research on culturing it in space is also underway.
・Nearly 20% of the cell weight is DHA, which is abundantly contained in fish oil, and can efficiently supply essential fatty acids.
・Soy sauce-based soup that brings out the seafood flavor of Aurantiochytrium

■ Noodles (Ingredients: Kamut wheat)
Features: Achieving chewy noodles with chewy texture derived from kamut wheat using enzyme technology.
・This is a type of durum wheat that was cultivated about 6,000 years ago and is twice the size of modern wheat.
・It has strong vitality and can be produced with high quality without relying on chemical fertilizers or pesticides.

■ Char siu (Ingredients: NEXT Euglena Yakiniku EX*1)
Features: By analyzing the umami and flavor components of beef and utilizing technology to reproduce that taste, we have created completely plant-based meat that tastes just as good as real meat.
