A workshop to “update udon” from Shibuya!
Application for participation: https://siw2023day3workshop2.peatix.com/

Shibuya is a place where diverse people gather and continue to create Tokyo's and Japanese culture. This is a workshop to update the traditional Japanese food, udon, from this city that is always at the cutting edge. What is the concept of global and sustainable udon noodles in the future? What is the shape of udon that is not only delicious, but can also become the soul food of future generations of Japanese people in this era of 100-year lifespans? Let's think about it as a group.
We will be inviting Mr. Maeda, president of "Hanamaru Udon", which first opened Sanuki Udon to Shibuya in 2002 and is planning a rebranding in the spring of 2024, to personally announce the new type of udon that everyone has come up with.
Would you like to come up with a concept that will become the standard for choosing udon noodles in the future?
*On the day of the event, we are planning a workshop where you can sample Hanamaru's udon and soup stock.

Tasty solutions to hidden social issues -Upcycle healthy beer snacks-
There are over 700 breweries in Japan, and the opportunities to drink a variety of beers have increased. On the other hand, the treatment of malt residue, which is generated in large quantities during the beer manufacturing process, is generally treated as industrial waste, which poses not only cost issues but also environmental concerns. However, malt residue is rich in nutrients such as high protein, high dietary fiber, and low sugar content, and is attracting attention as a superfood. We will show you how we transformed this material, which is difficult to eat as it is due to its high fiber content, into something delicious.
